These eggs have a wonderful taste and are packed full of health benefits. A freshly laid egg has a protective layer or “bloom” that seals the shell pores, prevents bacteria from getting inside the shell, and reduces moisture loss from the egg all designed to make the egg last longer. A Mother Earth News Study shows that FARM FRESH CHICKEN EGGS have less cholesterol and saturated fat, contain 25% more vitamin E, 75% more beta carotene and up to 20 times more Omega-3 fatty acids than those purchased from the store.

QUAIL EGGS are a delicacy. They can be scrambled, poached, fried, soft-boiled or hard-cooked and used as a protein rich snack or garnish for salads--perfect for kid's fingers and appetite. They taste similar to chicken eggs, but they have a slightly higher proportion of yolk to white. When cooked correctly, the whites are so tender they taste almost silky, but they can easily become tough or dry if overcooked.

EGG NOTES: Store pointed end down to keep the yolk more centered inside the egg--they will stay fresh longer. Wondering if they are still good? Float 'em--eggshells are porous so fresh eggs have less air in them--they sink while older eggs will float. Out of an abundance of caution, you'll find our eggs in the cooler when the temperatures are over 80 degrees for an extended time.
